
Take your Keto Lava Cake to the next level with a creamy, sugar-free peanut butter filling! This version combines rich, gooey chocolate with a melt-in-your-mouth peanut butter center, all while staying low-carb and keto-friendly!
Ingredients (Makes 2 Lava Cakes)
🥚 For the Cake:
• 2 oz sugar-free dark chocolate (85%+ cocoa or keto-friendly)
• 2 tablespoons unsalted butter
• 1 large egg
• 1 large egg yolk
• 2 tablespoons almond flour
• 2 tablespoons powdered erythritol (or preferred keto sweetener)
• 1/2 teaspoon vanilla extract
• 1/4 teaspoon baking powder
• Pinch of salt
🥜 For the Peanut Butter Filling:
• 2 tablespoons sugar-free peanut butter (creamy)
• 1 teaspoon powdered erythritol
• 1/2 teaspoon vanilla extract
🍓 For Toppings (Optional):
• Sugar-free whipped cream
• Fresh raspberries or strawberries (small portion for keto)
• Shaved dark chocolate
Instructions
1️⃣ Preheat the Oven:
• Preheat oven to 375°F (190°C). Grease two ramekins with butter or coconut oil.
2️⃣ Make the Peanut Butter Filling:
• In a small bowl, mix peanut butter, powdered erythritol, and vanilla extract until smooth.
• Roll into two small balls and freeze for 10 minutes to firm up.
3️⃣ Melt the Chocolate & Butter:
• In a microwave-safe bowl, melt chocolate and butter together in 30-second intervals, stirring until smooth.
4️⃣ Prepare the Batter:
• In a mixing bowl, whisk egg, egg yolk, sweetener, and vanilla extract until light and fluffy.
• Slowly mix in melted chocolate while stirring.
• Fold in almond flour, baking powder, and salt until well combined.
5️⃣ Assemble the Lava Cakes:
• Fill half of each ramekin with the chocolate batter.
• Place a peanut butter ball in the center.
• Cover with the remaining batter.
6️⃣ Bake the Lava Cakes:
• Bake for 9-11 minutes, until the edges are set but the center is still gooey.
7️⃣ Cool & Serve:
• Let cool for 1-2 minutes, then carefully run a knife along the edges and invert onto a plate.
• Top with whipped cream, berries, or shaved chocolate and enjoy!
