Ingredients (Serves 2)
🥩 For the Steak:
• 12 oz flank steak (or skirt steak)
• 1 tablespoon olive oil
• 1 teaspoon lime juice
• 1 teaspoon chili powder
• ½ teaspoon cumin
• ½ teaspoon smoked paprika
• ½ teaspoon garlic powder
• ½ teaspoon salt
• ¼ teaspoon black pepper
🌶 For the Fajita Veggies:
• ½ red bell pepper (sliced)
• ½ yellow bell pepper (sliced)
• ½ green bell pepper (sliced)
• ½ small onion (sliced)
• 1 tablespoon olive oil
• ½ teaspoon garlic powder
• ½ teaspoon salt
🥗 For the Fajita Bowl Base:
• 2 cups cauliflower rice (fresh or frozen)
• 1 tablespoon butter or olive oil
• ½ teaspoon garlic powder
• ½ teaspoon salt
• 2 tablespoons fresh cilantro (chopped)
• 1 teaspoon lime juice

• ½ avocado (sliced or mashed)
• ¼ cup shredded cheese (cheddar, cotija, or Monterey Jack)
• 2 tablespoons sour cream (or Greek yogurt)

🌶 For the Chipotle Lime Sauce:
• ¼ cup mayonnaise (or sour cream)
• 1 teaspoon lime juice
• ½ teaspoon chipotle powder (or 1 teaspoon adobo sauce from chipotle peppers)

Instructions
1️⃣ Marinate & Cook the Steak:
• In a bowl, mix olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
• Coat the steak in the seasoning and let marinate for 15-20 minutes.
• Heat a cast iron skillet or grill pan over medium-high heat.

• Heat olive oil in the same pan over medium-high heat.

3️⃣ Prepare the Cilantro-Lime Cauliflower Rice:
• Heat butter or olive oil in a pan over medium heat.
• Add cauliflower rice, garlic powder, and salt. Sauté for 3-4 minutes until soft.
• Remove from heat and stir in lime juice and chopped cilantro.
4️⃣ Make the Chipotle Lime Sauce:
• In a small bowl, whisk together mayo, lime juice, chipotle powder, garlic powder, and smoked paprika.
5️⃣ Assemble the Fajita Bowls:
• Divide cauliflower rice into two bowls.
• Top with sliced steak, sautéed peppers & onions, shredded cheese, avocado slices, and sour cream.
