
This Keto Middle Eastern Kofta is packed with aromatic spices, juicy ground meat, and a creamy tahini sauce—served with low-carb roasted cauliflower rice for the ultimate Mediterranean-inspired keto meal!
Ingredients (Serves 4)
🥩 For the Kofta (Meat Skewers):
• 1 lb ground beef or lamb (or a mix of both)
• 2 cloves garlic (minced)
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1 teaspoon smoked paprika
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1/4 teaspoon cayenne pepper (optional for heat)
• 2 tablespoons fresh parsley (chopped)
• 1 tablespoon olive oil
🥄 For the Tahini Sauce:
• 1/3 cup tahini (sesame paste)
• 2 tablespoons lemon juice
• 1 clove garlic (grated)
• 2 tablespoons water (to thin)
• 1/2 teaspoon salt
🥦 For the Roasted Cauliflower Rice:
• 1 medium head cauliflower (riced)
• 2 tablespoons olive oil
• 1 teaspoon ground cumin
• 1/2 teaspoon garlic powder
• Salt & pepper to taste
Instructions
1️⃣ Prepare the Kofta:
• In a mixing bowl, combine ground meat, garlic, spices, parsley, and olive oil.
• Mix well and shape into oval-shaped patties or skewers.
• Refrigerate for 15 minutes to help them hold their shape.
2️⃣ Cook the Kofta:
• Heat a grill pan or skillet over medium-high heat.
• Cook the kofta for 4-5 minutes per side, until browned and cooked through.
3️⃣ Make the Tahini Sauce:
• In a small bowl, whisk together tahini, lemon juice, garlic, salt, and water.
• Mix until smooth and creamy. If too thick, add more water 1 tsp at a time.
4️⃣ Roast the Cauliflower Rice:
• Preheat oven to 400°F (200°C).
• Toss cauliflower rice with olive oil, cumin, garlic powder, salt, and pepper.
• Spread evenly on a baking sheet and roast for 10-12 minutes, stirring halfway through.
5️⃣ Assemble & Serve:
• Plate the kofta skewers over the roasted cauliflower rice.
• Drizzle with tahini sauce and garnish with fresh parsley or lemon wedges.
