Ingredients (Serves 2)
🥑 For the Avocado Bowls:
• 2 large avocados (halved & pitted)
• 4 large eggs
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
🌶️ For the Chorizo Filling:
• 1/2 cup chorizo (cooked & crumbled)
• 1/4 cup shredded cheddar or Monterey Jack cheese
• 1 tablespoon fresh cilantro (chopped)
• 1/4 teaspoon smoked paprika
🥓 Optional Toppings:
• 2 tablespoons sour cream
• 1 tablespoon chopped green onions
• 1 tablespoon sugar-free hot sauce
Instructions
1️⃣ Preheat the Oven:
• Preheat oven to 375°F (190°C). Line a baking dish with parchment paper.
2️⃣ Prepare the Avocados:
• Scoop out a small portion of the avocado flesh to create a bigger well for the eggs.
• Place avocado halves in the baking dish to keep them stable.
