• 4 large bell peppers (red, yellow, or green), halved and seeded
• 1 lb ground turkey or ground beef
• 2 cups fresh spinach, chopped

• 2 tablespoons olive oil
• 2 cloves garlic, minced

Instructions
1. Preheat the Oven:
• Preheat your oven to 375°F (190°C). Place the halved bell peppers in a baking dish and drizzle with 1 tablespoon of olive oil. Roast them in the oven for 10 minutes to soften slightly.
